Roasted Broccoli

INGREDIENTS

  • 1 head of broccoli

  • 3 Tbsp olive oil

  • Sea salt and ground pepper

  • 2 Tbsp balsamic vinegar

  • 1 tsp Dijon mustard

PREPARATION

 

  • Preheat oven to 400° F. Cut broccoli into bite-sized pieces.

  • In a large baking pan, toss broccoli with 2 Tbsp oil and ¼ tsp sea salt until well coated. Spread in a single layer. Roast, stirring frequently, until browned. And tender, 18-25 minutes.

  • In a large bowl, mix vinegar, mustard, and remaining 1 Tbsp oil. Add warm broccoli and mix to coat. Season to taste with salt and pepper and serve.

 

Makes 4-6 side-dish servings.
